Conservas Ortiz


The family Ortiz canning business from the Spanish Basque country has been canning traditional top-quality products since 1891. Conservas Ortiz is particularly concerned with the future of fishing and aiding the recovery of the species. This is why it uses traditional techniques, such as live bait and trolling to catch the albacore and the seine net for anchovies.

Albacore tuna is an Ortiz speciality made traditionally. It is line-fished, one by one in the waters of the Bay of Biscay (Cantabrian Sea) in the summer.

The albacore tuna is a white tuna, bonito del norte. It has a distinctive delicate flavour, smooth texture and its meat is white.

In olive oil: This brings out the flavour of the tuna and makes it melt in the mouth.

Escabeche: Typically Mediterranean sauce made with garlic and vinegar.
