The Organic balsamic vinegars made by FATTORIE GIACOBAZZI come exclusively from the region of Modena in Italy. They are labelled IGP: Indication Géographique Protégée (produced in a defined Geographical area) and the more precious ones DOP: Denominazione di Origine Protetta (literally: Protected designation of origin). They therefore meet the very stringent and extremely restrictive specifications complied with by producers in this region.
The FATTORIE GIACOBAZZI factory is very well known for its production of balsamic vinegar from Modena and is, of course, a member of the CABM (Consorzio Aceto Balsamico di Modena PGI) and therefore scrupulously complies with the discipline and the production conditions laid down by the CABM.
The “3 leaf” organic balsamic vinegar has a well-structured and harmonious taste and a lingering finish in the mouth. Its fragrance is intense and characteristically acid.
